Sourdough Pizza


Sourdough Pizza: A delicious twist on the classic, our sourdough pizza recipe combines the chewy goodness of sourdough with your favorite pizza toppings for a flavorful and homemade pizza experience. Enjoy an all time favorite meal with a special Sourdough twist! This pizza has the perfect crunchy crust with an irresistibly airy and soft interior. Ingredients:


Leavin:

25 g active sourdough starter

40 g bread flour

10 g Rye flour/whole grain flour

50 g water.


Main Dough:

600 g 00 flour

120 g leavin

360 g water

12 g salt


Additional:

Pizza sauce of choice

Toppings/cheese of choice


Step-by-step instructions:


Step 1:

Prepare Levain- Mix the ingredients for the levain 4-5 hours before making the main dough. Cover the mixture and let it rise in a warm spot until it doubles or triples in size and becomes bubbly.


Step 2:

Gather all the ingredients for the main dough. Mix it all together in a large mixing bowl and knead it until the dough comes together. Cover and rest for a few minutes. Knead again for 5-10 mins until the dough becomes a smooth ball. It should pass the windowpane test(where you can stretch the dough without tearing it and can see your fingers through).

If the dough tears, knead again for a few more minutes. Don’t over stress the dough.


Step 3:

Put the dough in a lightly oiled bowl. Cover it and let it rest for 4-5 hrs until it is doubled in size.


Step 4:

Divide the dough into 4-5 equal balls. I like to weigh each ball at 240g. Shape each portion into a seamless ball and place them on a floured baking sheet.

Step 5:

Cover the baking sheet and put it in the fridge for 24-48 hrs.


Step 6:

Take the balls out 3-4 hrs and proof it at room temperature before you wanna make the pizzas.


Step 7:

Preheat your oven to the highest temperature it can reach (usually around 500°F or 260°C) with a pizza stone. While the oven is preheating, prepare your pizza toppings and have them ready.

Take one of the fermented dough balls and gently flatten it into a pizza shape on a floured surface. Use your hands to press the dough towards the outside.


Transfer the shaped dough onto a piece of parchment paper, which will make it easier to slide onto the hot baking stone or sheet.


Spread a thin layer of your chosen pizza sauce on the dough, leaving a small border for the crust. Add your chosen toppings and a generous amount of your favorite cheese.


Step 8:

Carefully transfer the pizza (with parchment paper) onto the preheated baking stone. Bake for about 8-12 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.


Use a pizza peel or a large spatula to remove the pizza from the oven and transfer it to a cutting board.

Let it cool for a minute or two before slicing.
